  • 4 – 5 carrots
  • 1 medium onion
  • 10 almonds
  • 5 garlic pods
  • 1 tbsp. of coriander seeds
  • 1 tbsp. of cumin seeds
  • 1/4th of turmeric powder
  • 1 ½ tbsp. of salt
  • 1 tbsp. of chili powder
  • 4 tbsps. of oil
  • ½ cup of water

  1. Wash all the carrot under running water thoroughly.
  2. Chop them into fine pieces. Chop onion into fine pieces.
  3. To make carrot masala take a mixi jar, add almonds, garlic pods, coriander seeds and cumin seeds and make them into fine powder. Make sure don’t add any water while preparing the masala.

  4. Take a cooker or kadai, then add 3 tbsps. of oil then add chopped onions, turmeric powder, salt and chili powder and fry until onions became translucent.

  5. Now add almond masala powder and fry until it oozes out oil. If masala is getting stick to the bottom of the cooker then add another tbsp. to 2 tbsps. of oil and mix nicely.

  6. Now add chopped carrot pieces and fry for 3 minutes.

  7. Add ½ cup of water and after water is boiling keep the cooker lid and cook for 3 whistles.

  8. After cooker gets cooled, remove the lid and check if any water is left then fry the curry until water evaporates and oil oozes out from the curry.

  9. Switch off the flame and transfer into serving bowl.
  10. Serve carrot poriyal with hot rice or chapathi.
