i will prepare vankaya kura most often at home. actually we can make this stuffed brinjal recipe with so many variations, this brinjal recipe is my favorite version as it has very easy process and taste is awesome. Once you have this you will fall in love with this curry.

brinjal masala has nice sour & sweet flavours. This stuffed eggplant recipe goes well with any indian bread like chapati roti rice and even briyani too. usually some times i will serve this gutti vankaya curry for idli as a side dish, it tastes yummy.

i have prepared this brinjal masala with purple brinjals you can prepare with green brinjal too. i have added jaggery in the brinjal curry if you want you can substitute jaggery with sugar too. the given measurements in the recipe suits for 3 – 4 people for lunch.

how to make brinjal masala

  1. Wash the brinjals.
  2. Slit the brinjals into star or plus shape on topper side with the help of knife.
  3. Chop the onions.
  4. Take a mixy jar add cumin seeds, coriander seeds, salt, chilly powder, turmeric powder, tamarind, onions, tomato, channa dal, sesame seeds , ground nuts & and make them into fine paste  (add only few drops of water if required).
  5. Heat a mini pressure cooker or kadai , add oil & add gravy, and fry it for 2 min.
  6. Now add jaggery and fry the gravy until it oozes out oil from its surroundings
  7. .Now add these slitted brinjals and fry for few seconds.
  8. Add some water and cook for 3 whistles.
  9. Enjoy this mouth watering vankaya kura with rice or chapatis.

  • Sesame seeds – 1 ½ tbsp
  • Salt – 1 ½ tbsp- 1 3/4th tbsp (as per your taste)
  • Chilly powder – /4th tbsp- 1 tbsp(as per your taste)
  • Onion – 2m
  • Channa dal – 2-3 tbsp
  • Jeera – 1/2 tbsp
  • Coriander seeds -1/2tbsp

  • Turmeric powder- 1/4th tbsp
  • Jaggery – 1/4th lemon size
  • Tamarind – 3 inches

Note

  1. If you prepare this brinjal sabzi in kadai then you need more quantity of water (more than ½ glass).
  2. You have to stir the curry for every 2-3 min until brinjal gets cooked.
